Instructions

Rinse mussels and discard any that are cracked or stay open after tapping.

In a wide pot, sauté shallot, garlic, and ginger for 2 minutes.

Add curry paste and cook for 1 minute until fragrant.

Add coconut milk, fish sauce, and brown sugar. Simmer for 3-4 minutes.

Add mussels, cover, and steam for 5-7 minutes until opened. Discard any unopened mussels.

Finish with lime juice and cilantro.

Serve with crusty bread or jasmine rice for the broth.
