Instructions

Sauté the onions, chilies, ginger, and turmeric until fragrant.

Add thin coconut milk, salt, and fish pieces and cook gently until the fish is done.

Add vinegar and continue to cook briefly.

Add thick coconut milk, heat through (do not boil), check seasoning, and remove from heat.

Notes

The 1.5 cups coconut milk should be prepared (e.g., from 25g coconut powder) and then separated into thin and thick portions as used in the instructions (e.g., 1 cup thin and 0.5 cup thick).
