Instructions

Preheat oven broiler to high.

Place a grater over a bowl. Grate each tomato into the bowl, being careful not to grate your fingers, until only the skin and stem remain.

To the grated tomato, add the minced garlic, 3 tablespoons of olive oil, salt, and pepper. Mix well and adjust seasonings to taste.

Lightly toast the sliced baguette under the broiler until golden, about 1-2 minutes per side.

Spoon the tomato mixture generously onto each slice of toasted bread.

Drizzle with additional olive oil if desired before serving.
