Instructions

Lightly grease a 9-by-9-by-2-inch (23-by-23-by-5-centimeter) dish with butter.

In a large bowl, using a hand mixer, beat the cream and confectioners’ sugar on medium-high speed until medium-stiff peaks form, 5 to 7 minutes.

In another large bowl, using a hand mixer, beat together the mascarpone, Nutella, and salt on medium speed until well combined.

Gently fold 3/4 cup (180 milliliters) of the whipped cream into the mascarpone mixture until the mixture is light brown, with no visible streaks of Nutella.

In a microwave-safe measuring cup with a spout, microwave the water for 45 seconds, or until hot. (Alternatively, heat the water in a small saucepan over medium-high heat until hot.) Stir in the espresso powder until completely dissolved.

Working with one cookie at a time, submerge it in the espresso mixture for just a few seconds, arranging them as you work to form a single layer on the bottom of the prepared dish. (This should use about 16 cookies.)

Spread half of the remaining whipped cream evenly over the cookie layer, covering it completely. Add a second layer of espresso-dipped cookies (this should use about 16 more cookies), then spread the mascarpone mixture evenly over the top. Add a third layer of espresso-dipped cookies, followed by the rest of the whipped cream. Smooth out the top to completely cover the cookies.

Using a fine-mesh strainer or sifter, dust the top of the tiramisu with cocoa powder, just enough to cover. Decorate with cookie halves, sticking them into the top layer of the whipped cream mixture.

Cover the dish with plastic wrap and refrigerate for at least 6 hours before serving.

Notes

Make ahead: The tiramisu needs to be assembled at least 6 hours, and preferably 8 to 12 hours, before serving. Storage: Refrigerate for up to 4 days. Where to buy: Instant espresso powder and Mulino Bianco Pan di Stelle cookies can be found at well-stocked supermarkets, Italian specialty markets and online. Substitutions: Instant espresso and water can be substituted with 3/4 cup (180 milliliters) freshly brewed espresso. For caffeine-free, use decaffeinated espresso powder. Pan di Stelle cookies can be substituted with Goya Chocolate Maria cookies.
